Rice noodles are at the heart of this story. With Yunnan’s crossing-the-bridge noodles and regional small dishes, 575 offers a familiar taste for those missing home—and a welcoming introduction for anyone discovering the cuisine.
Run Wild travels from Dali towards Patagonia; 575 brings Yunnan to the Bay Area. Two different journeys, each carrying a sense of where it began.
THE TASTE OF YUNNAN

A mix of toppings brings contrasting textures and flavours to every bowl.

Hot broth and ingredients arrive separately. Bringing them together is part of the pleasure of this Yunnan classic.

Founder Wang Jiefu comes from Kunming, Yunnan. According to the brand’s website, 575 was founded in Silicon Valley in 2016. Yunnan.cn reports that the restaurant opened in June 2018, following two years of preparation.
He chose the spelling “Miishien” to echo the Kunming pronunciation of rice noodles. The name itself became a way to introduce his hometown to an English-speaking audience.
The brand draws inspiration from the Flying Tigers and the friendship between Chinese and American people, with food as a meeting point between cultures. For Wang, the ambition extends beyond opening a restaurant: it is a lasting commitment to refining a bowl of noodles.
According to the brand, the name reflects an original concept of five rice noodle dishes, five wheat noodle dishes and seven specialities.
A distinctive English spelling that preserves the sound of rice noodles in the Kunming dialect.
The brand’s website describes a pledge to donate one child’s lunch for every three bowls sold—extending the impact of a meal beyond the restaurant.
A SMALL BOWL. A LONG JOURNEY.
The flavours of home can travel with us. They can also be an invitation: take a seat, share a bowl, and discover a place through the people who bring it to the table.
